Blueberry Pancakes and Budgeting
If you follow my Instagram you probably saw my stories over the weekend about how my husband and I have started taking Dave Ramsey’s Financial Peace University. Because of this, we are looking for ways to cut our budget and save money. The first thing we did was cut out all eating out at restaurants (yes, even that dollar menu hamburger from McDonald’s!). The second thing we are trying is grocery skipping. Grocery skipping is exactly what it sounds like-skipping buying groceries for one week. That’s right. We are spending one week living off only the food we have in our pantry and freezer!
Though it has forced us to be more creative with our meals, we were shocked at how much food we actually had lying around that we didn’t know about! The first day I made blueberry pancakes for breakfast and peanut butter/chocolate cookies from scratch. I have posted the recipe to the blueberry pancakes below. They were YUM.

Blueberry Pancakes
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 pinch of salt
- 1 cup milk
- 2 tbsp melted butter
- 1 large egg
- 1/2 cup frozen blueberries
Heat frying pan over medium-low heat.
Blend flour, sugar, baking powder, salt, milk, butter, and egg together in a large bowl with a wooden spoon. Do not over stir but mix until all of the clumps are gone.
Use a blender to blend the frozen blueberries then add them to the mixture.
Scoop the mix onto frying pan using a 1/4 cup and wait 90 seconds before flipping over onto the other side.
Serve with fresh fruit, whipped topping, or syrup!
